Red Velvet What?

So what am I missing?

A light chocolate cake with red food coloring in it.  OK  If it is done right it is not a bad dessert, but really I think it has gotten out of hand.  No offense to those who love it.

This much red food coloring can't be good for your system.  What was that big thing about Red #5?  I know they fixed the toxic-ness of it, but really, does red food coloring and the name "red velvet" really make it taste better?

I know the Cheesecake factory does a combination of this with cheesecake.  I have tried it - not bad, but not my favorite.
